Sweet and Sour Vegan Meatballs


When I was little and I would be begging for something I couldn't have, my Dad would sing me the song "You Can't Always Get What You Want", by the Rolling Stones.  It would irritate the crap out of me and I just hated hearing that song.  I am sure I heard the song hundreds of times played or sung over the years.  The funny thing is though, now as an adult, I appriciate it.  It is true, as the lyrics go..."you can't always get what you want...but if you try sometimes, you just might find, you get what you need."  Life is misreable for anyone who doesn't believe this.  If I didn't I would have been really upset last night when I went to make Vegan Italian meatballs but didn't have any canned tomatoes or pasta on hand.  Instead of getting upset, I decided that it was not meant to be an Italian night, but instead and Asian night for dinner. 


I had the ingredients for Asian flavored meatballs, so I made Sweet and Sour Vegan Meatballs with sauteed veggies.  And you know what?  They were amazing...and I happened to have some plum saki in my fridge to serve them with!  Lesson learned, not getting what I wanted can lead to creativity and a delicious new recipe.  Here it is if you wish to try it! 


Sweet and Sour Vegan Meatballs
Serves 4

Meatballs:
1 Tbsp peanut oil
1 cup chopped red onion
3 cups chopped crimini mushrooms
1 Tbsp fresh ginger
1 cup shredded carrots
1 1/2 cups toasted walnuts
2 cups dried whole wheat bread crumbs, or as needed
2 Tbsp miso
2 Tbsp tamari
2 tsp sea salt
red pepper flakes
freshly ground pepper to taste
Sauce:
1 Tbsp fresh ginger, minced
2 garlic cloves, minced
red pepper flakes
1 1/4 cups apple cider
1/4 cup tamari
2 Tbsp mirin
2 Tbsp cider vinegar
1 Tbsp maple syrup
1 tsp toasted sesame oil
3 Tbsp cornstarch dissolved in 3 Tbsp water

Veggies:
1 Tbsp peanut oil
3 cups brussels sprouts, halved
2 large carrots, halved and sliced
2 cups mushroom, sliced

toasted sesame seeds
rice to serve

Preheat the oven to 475.  To make meatballs, heat 1 Tbsp peanut oil in a large non-stick skillet over medium heat.  Add onion, ginger, and carrots, and saute until softened, about 5 minutes, then add the mushrooms and saute until soft, about 3 minutes.  Add garlic and saute another minute until fragrant, then remove from heat.  Place mixture in a food processor along with walnuts, breadcrumbs, miso, tamari, sea salt, and pepper.  Process until smooth.  Add a little more breadcrumbs if too sticky, then shape into 16 little balls and place on a baking sheet lined with foil and sprayed with non-stick spray.  Bake for about 15-20 minutes until heated through, and starting to brown.  Meanwhile, whisk together the sauce ingredients and set aside.  In a large non-stick skillet heat 1 Tbsp peanut oil and add the brussels sprouts, carrots and mushrooms.  Saute until starting to soften, but still slighlty crunchy, just a few minutes.  Add the sauce, and cook until thickened, just a few minutes.  Remove from heat and add meatballs.  Carefully stir to coat (meatballs are fragile, so be careful), sprinkle with sesame seeds and serve with rice if desired.

Cashew Carrot Meatballs with Silky Coconut Curry Sauce


I was going to make veggie burgers the other day, but then decided that burgers were boring, and I decided to make veggie meatballs instead!  Afterall, who can resist little vegetarian meatballs...certianly not me!  I normally make a walnut mushroom meatball in a red sauce, very Italian, but went a little different direction with these.  I already had the burger mixture made, and it was a carrot cashew mixture that was just begging to be put into some sort of curry sauce, not a traditional red sauce that would be served with classic meatballs.  I decided that silky coconut milk would be perfect with the savory meatballs, so that is what I made. 


The sunny little orange meatballs went perfectly with the silky sauce.  They were filled with the goodness of cashews and sweet carrots enhanced of course with onions and garlic as well as some miso and tamari for that something special!  I think I may just like these better than the Italian style meatballs, they are deliciously exotic, and perfectly spiced!  I served them with rice, and they made for a delicious dinner!  Here is the recipe if you would like to try some for yourself!

 
Cashew Carrot Meatballs with Silky Coconut Curry Sauce
Serves 4

"Meat" balls:
1 Tbsp coconut oil
3 cups shredded carrot
3 large shallots, chopped
3 garlic cloves, minced
1 cup toasted cashews
1/2 cup sunflower seeds
2 Tbsp flax seeds
1/4 cup tamari
1/4 cup white miso
1 Tbsp sea salt
1 Tbsp dried basil
2 cups whole wheat panko

Sauce:
1 tsp coconut oil
1 tsp fresh ginger, minced
1 garlic clove, minced
a pinch of red pepper flakes
1 1/2 Tbsp mild curry powder
1 tsp tumeric
1 15 oz can full fat coconut milk
1 tsp agave nectar
sea salt to taste
2 Tbsp arrowroot dissolved in 2 Tbsp water
juice of one small lime
1 Tbsp chopped cilantro, optional
cooked rice for serving, optional

To make meatballs, heat coconut oil in a large non-stick skillet, and add carrots, and shallots.  Saute until soft, about 5-7 minutes, then add garlic and saute another minute until fragrant.  Remove from heat.  In a food processor, combine cashews, sunflower seeds, flax seeds, and process until very finely ground and almost turning into nut butter.  Add tamari, miso, sea salt, basil and carrot mixture and process until well combined.  Remove to a large bowl, and stir in panko.  Line a baking sheet with foil, and spray with non-stick spray.  Form the carrot nut mixture into 12 balls, and place on the baking sheet.  Bake at 400 degrees until just starting to brown, about 15 minutes.  Meanwhile, to make the sauce, heat coconut oil in a small saucepan, and add ginger, garlic, and pepper flakes.  Saute for a minute until fragrant, and add curry powder and tumeric and saute another 30 seconds, then add coconut milk and agave nectar and bring to a low simmer.  Add sea salt to taste, and let simmer about 5 minutes, then add arrowroot mixture, lime juice and cilantro and cook until slightly thickened.  Remove from heat, and keep warm.  Serve meatballs with sauce and some rice if desired.

Italian Mushroom Walnut "Meatballs"



My Mom has always told me I make the best meat balls.  Which was funny because I don't eat meat, I simply make them for loved ones because I am nice.  My Mom loves them, so I make them once in a while, but on Friday I decided I would like some meatballs as well, so I decided to create a vegan version of them.  I had a bunch of leftover mushrooms that needed to be used up, so I thought what better a base than meaty tasting mushrooms for my "meatballs"!  I combined them with walnuts, nutritional yeast for a cheesy flavor, and plenty of herbs, which is actually the base for one of my veggie burgers, but worked really well as a "meatball".  I was afraid that maybe they would be too mushy, but this was not the case at all, they held together well, had wonderful flavor, and once I ladled some of my usual pasta sauce over them they were pretty amazing if I do say so myself! 


I was too lazy to make pasta, so I opted for a piece of toasted garlic bread instead which ended up being a delicious accompaniment!  My Mom who is my biggest food critic loved the meatballs and told me to never make the ones containing real meat again because these were better!  Hmm...maybe I am rubbing off on her a bit?  Well they were pretty darn good in my opinion, and if you would like to try an awesome meat free "meatball"  here is the recipe!


Italian Mushroom Walnut "Meatballs"
Serves 3-4

Meatballs:
1 Tbsp olive oil
1 cup chopped red onion
3 cups chopped crimini mushrooms
1 1/2 cups toasted walnuts
2 cups dried whole wheat bread crumbs, or as needed
3 Tbsp nutritional yeast
2 tsp sea salt
1 Tbsp each dried basil, parsley, and oregano
freshly ground pepper to taste

Sauce:
olive oil
2 cloves garlic
red pepper flakes
2 Tbsp red wine
1 15 oz can crushed organic tomatoes
2 tsp dried basil
2 tsp dried parsley
2 tsp dried oregano
1 tsp fennel seeds
1 tsp sea salt or to taste

Bread:
4 large slices hearty peasant bread
olive oil
1 Tbsp minced garlic
sea salt
vegan parmesan cheese

Preheat the oven to 475.  To make meatballs, heat 1 Tbsp olive oil in a large non-stick skillet over medium heat.  Add onion, and saute until softened, about 5 minutes, then add the mushrooms and saute until soft, about 3 minutes.  Add garlic and saute another minute until fragrant, then remove from heat.  Place mixture in a food processor along with walnuts, breadcrumbs, nutritional yeast, sea salt, herbs and pepper.  Process until smooth.  Add a little more breadcrumbs if too sticky, then shape into 16 little balls and place on a baking sheet lined with foil and sprayed with non-stick spray.  Bake for about 15-20 minutes until heated through, and starting to brown. 
Meanwhile to make sauce, heat 1 Tbsp olive oil in a medium saucepan.  Add garlic and pepper flakes, and saute until fragrant, about 1 minute.  Add wine, tomatoes, herbs, and sea salt, and bring to a simmer.  Simmer for about 20 minutes until the flavors have blended.  Keep warm. 
To prepare bread, brush with olive oil, and rub with garlic.  Sprinkle with sea salt and vegan parmesan and place on a foil lined baking sheet and bake in the oven until crispy and browned at the edges.  To serve, place a piece of bread on a plate, place a few meatballs on top of it and ladle the sauce over.  Enjoy!
